Thermal vs Impact Kitchen Printers

Thermal fades in hot kitchens; impact is loud but survives grease. Which to buy per station, what each costs, and how to avoid rewiring your POS.

Thermal printers are quiet, fast, and have exactly one consumable, but their tickets fade in heat and steam — so they belong at the pass, the bar, and the register. Impact printers are loud and slower, but they shrug off grill-line heat and grease — so they belong at the hot stations. Most restaurants end up with both. This guide covers how each technology works, what each actually costs to buy and run, a station-by-station recommendation — and the compatibility question that decides more printer purchases than the technology does.

How each one works (30 seconds each)

Thermal printers have no ink at all. The paper itself is coated with a chemical layer that turns black when heated, and the printer draws the ticket with a strip of tiny heating elements. That's why thermal printers are nearly silent, fast, and never need ribbons — and also why their output is vulnerable to the very thing a kitchen is full of: heat.

Impact printers (also called dot-matrix printers) work like a miniature typewriter: a print head physically hammers pins through an inked ribbon onto plain paper. Moving metal parts make them loud and comparatively slow, and ribbons wear out — but the ink is on the paper rather than being the paper, so the ticket doesn't care about heat, steam, or a greasy thumbprint.

The noise point cuts both ways. Plenty of kitchens like that an impact printer is audible — the clatter is a built-in "new ticket" alert on a loud line. At the host stand or in a quiet café, the same noise is a dealbreaker.

What they cost — hardware and consumables

Hardware. Name-brand thermal receipt printers carry a real premium: an Epson TM-m30III runs roughly $275–541 street price and the OmniLink TM-T88VII about $370–571, while generic 80mm thermal printers sell for $40–160 (the Amazon best-seller cluster sits around $50–90). A large part of that premium buys POS compatibility, not print quality — more on that below. Kitchen-grade impact printers (the classic Epson TM-U220 class and its Star equivalents) typically land in the low-to-mid hundreds; there are fewer generic options because the market is smaller.

Consumables. Thermal paper costs a little more per roll than plain bond paper, but that's the entire recurring cost — no ink, no ribbons. Impact printers consume ribbons on top of (less expensive) plain paper; a busy station can go through a ribbon in a few weeks, and a fading ribbon means fading tickets until someone swaps it. Neither cost will make or break a P&L, but the operational difference matters: thermal has exactly one consumable to stock, and it never runs "half empty" the way a drying ribbon does.

Total cost picture. For a typical 3-printer store, name-brand hardware runs roughly $800–1,600 versus $200–350 for generic equivalents. The catch is the compatibility section below.

The rule of thumb, if you want it even shorter: if you can feel the heat standing at the printer's spot, buy impact. Everywhere else, buy thermal.

Two placement notes that beat any purchasing decision:

What about kitchen display screens?

Kitchen display systems (screens instead of printers) are taking over in high-volume kitchens, and they're genuinely good — no paper, no fade, ticket timing built in. But screens cost more up front, need mounting and power at every station, and plenty of kitchens simply prefer paper tickets they can physically move down a rail. Printers remain the standard in small and low-volume kitchens, and customer receipts stay on paper regardless.

The question that outranks the spec sheet: will your POS talk to it?

Here's the part most buying guides skip. Whichever technology you pick, your POS decides whether the printer you buy will ever print a ticket. Cloud POS systems — Toast, Square, Shopify, Lightspeed, Clover — each drive only a short list of certified printer models, usually from Epson and Star, because supporting the endless variations of generic printers is a testing burden they've chosen not to carry. That whitelist, not the print technology, is why so many restaurants pay the $275–541 name-brand price instead of $60 for a generic that produces near-identical tickets.

A node takes that question out of the buying decision. It sits in front of any standard receipt printer — anything that speaks ESC/POS, the near-universal receipt-printer command language, which covers both thermal and impact models — and presents it to your POS as a network printer at a fixed address. The POS sends raw ESC/POS to port :9100, exactly as it would to a certified model, and the node answers DLE EOT status queries with real paper-out and cover-open state, so the POS gets answers instead of silence. That changes the buying decision in three concrete ways:

  • Pick the printer for the station, not the whitelist. Thermal at the bar, impact on the grill line, generic where the budget says so.
  • Swap without reconfiguring. Replace thermal with impact, or brand A with brand B, and the POS keeps printing to the same address with the same settings.
  • Print through outages. Nothing in the print path depends on the internet, so tickets keep printing when the uplink dies.
